Rock Bottom Pie is a nostalgic no-bake dessert layered with a chocolate crust, creamy filling, and whipped topping. It’s rich, easy to make, and always crowd-pleasing.
Ingredients
1 1/2 cups crushed chocolate cookies
1/4 cup melted butter
1 (3.4 oz) package instant vanilla pudding
1 cup milk
8 oz cream cheese (softened)
1 cup whipped topping
Optional: chocolate chips, peanut butter drizzle, crushed nuts
Instructions
1. Crush chocolate cookies and mix with melted butter. Press into a 9-inch pie dish and chill.
2. In a separate bowl, whisk together instant vanilla pudding and milk. Let sit for 5 minutes.
3. Beat softened cream cheese until smooth, then fold in the pudding.
4. Spread mixture over chilled crust and top with whipped topping.
5. Add optional toppings if desired.
6. Refrigerate for at least 2 hours before serving.
Notes
Crust can be made with graham crackers, Oreos, or any chocolate cookies.
Let the cream cheese come to room temperature for a smoother filling.
This pie can be frozen and thawed for a chilled texture.
