Instructions

  1. Pour the lactose free milk into a saucepan and heat over medium heat until it reaches 190°F (just before boiling).

  2. Remove from heat and stir in the vinegar or lemon juice. Let sit undisturbed for 10–15 minutes until curds form.

  3. Line a strainer with cheesecloth and pour in the curdled mixture. Drain for 10–20 minutes, depending on how dry you like it.

  4. Transfer to a bowl. Stir in salt and lactose free cream for added richness (optional).

  5. Refrigerate and enjoy within 4–5 days.
