1 liter lactose free whole milk

2 tablespoons white vinegar or lemon juice

1 tablespoon lactose free cream (optional)

Instructions

Pour the lactose free milk into a saucepan and heat over medium heat until it reaches 190°F (just before boiling).

Remove from heat and stir in the vinegar or lemon juice. Let sit undisturbed for 10–15 minutes until curds form.

Line a strainer with cheesecloth and pour in the curdled mixture. Drain for 10–20 minutes, depending on how dry you like it.

Transfer to a bowl. Stir in salt and lactose free cream for added richness (optional).
