Description

This protein-rich cottage cheese bread is fluffy, low-carb, and perfect for healthy breakfasts, lunches, or snacks.


Ingredients

  • 1 cup cottage cheese

  • 3 large eggs

  • 1 cup almond flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tbsp olive oil

  • ½ tsp sea salt

  • Optional: herbs, garlic powder, or cinnamon


Instructions

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment.

  • Whisk eggs, cottage cheese, and olive oil in a large bowl.

  • In a separate bowl, combine almond flour, baking powder, baking soda, and salt.

  • Gradually fold dry ingredients into wet mixture.

  • Pour into loaf pan and smooth the top.

  • Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
