Ingredients

1 cup cottage cheese

1 cup almond flour

1 tsp baking powder

½ tsp baking soda

1 tbsp olive oil

Instructions

Preheat oven to 350°F (175°C). Line a loaf pan with parchment.

Whisk eggs, cottage cheese, and olive oil in a large bowl.

In a separate bowl, combine almond flour, baking powder, baking soda, and salt.

Gradually fold dry ingredients into wet mixture.

Pour into loaf pan and smooth the top.

Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
